Lemon Loaf

Bring Lemon Loaf to your table with an easy method and crowd-pleasing taste. It’s perfect for busy weeknights and casual gatherings alike.

Lemon Loaf captures the essence of drinks while staying approachable for everyday cooking. The method focuses on maximizing flavor with minimal steps, using common pantry items and fresh ingredients. From the first bite you’ll notice a balance of texture and taste that feels both familiar and exciting. To build depth, we combine proper seasoning with simple techniques: gentle heat for aromatics, accurate measurements, and attention to doneness. Small details—like resting time or layering ingredients—make a noticeable difference in the final dish. This recipe is designed to be flexible. You can swap in seasonal produce, adjust spices to match your preferences, or adapt the base to suit dietary needs. The goal is to keep the spirit of the dish while letting you tailor it to your kitchen. Serving ideas are wide open: pair with a crisp salad, roasted vegetables, warm bread, or your favorite grains. Leftovers store well and often taste even better the next day as flavors settle. That makes the recipe suitable for meal prep and busy schedules. For best results, read the steps once before you start, assemble ingredients, and cook with confidence. Taste as you go, and don’t be afraid to adjust seasoning. With these principles, Lemon Loaf becomes a reliable addition to your rotation—crowd-pleasing, practical, and full of flavor.

2 large eggs
1/3 cup vegetable oil
1/4 cup lemon juice
1 tbsp lemon zest
1/2 cup milk
1/2 tsp vanilla extract
Lemon glaze:
1 cup confectioners’ sugar
2 tbsp lemon juice
1 tbsp lemon zest
How To Make Lemon Loaf
Preheat the oven to 350°F (180°C). Grease and flour a 9×5-inch loaf pan.
In a medium mixing bowl, whisk together the flour, baking powder, and salt.
In a separate large mixing bowl, beat together the sugar, eggs, vegetable oil, lemon juice, and lemon zest until well combined.
Add the dry ingredients to the wet ingredients in two additions, alternating with the milk and vanilla extract. Mix until just combined.
Pour the batter into the prepared loaf pan and smooth the top. Tap the pan gently on the counter to release any air bubbles.
Bake the loaf for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
To make the lemon glaze, whisk together the confectioners’ sugar, lemon juice, and lemon zest until smooth. Pour the glaze over the cooled loaf, letting it drizzle down the sides.
Serve the lemon loaf at room temperature, slice and enjoy!
